Oreo Cookies
-Makes 30 cookies
Ingredients:
1/2 cup butter, at room temperature
6 tbsp sugar*
6 tbsp light brown sugar*
1 egg
1 tsp vanilla
1-1/4 cup all purpose flour
1/2 tsp baking soda
1/2 salt
12 oreo's, broken into small pieces
*Note: In my case, I reduced the amount of sugar to 7 tbsp of brown sugar as I didn't want my cookies to be too sweet. It turns out just nice for me, it really depends on what you prefer.
Directions:
1. Preheat the oven to 180 degree Celsius. In the bowl of an electric mixer, cream together the butter and sugar till light and fluffy. (around 2-3mins)
2. Add in egg and vanilla and beat till well mixed.
3. In another bowl, whisk together flour, baking soda and salt.
4. With the mixer on low, slowly add in the dry ingredients into the wet ingredients till just combined. Gently pour in oreo pieces.
5. Scoop dough onto an greased tray about 1-2" apart.
6. Bake for 8 to 10 mins OR until the edges start to turn brown. Then let it cool for a few minutes.
7. Enjoy your freshly baked cookies!
